Description
This wine results from blending two outstanding varieties, Assyrtiko and Semillon (a Bordeaux variety), grown on the hottest, most barren part of the estate’s vineyard, on the slopes of Mount Pangaion. Semillon’s aromatic expression and strong aging potential are harmoniously complemented by the power, structure, and pronounced acidity that Assyrtiko brings. It’s fermented in French oak barrels. A few months resting in its oak home, in contact with the lees, brings out its varietal character and gives it a rich, complex flavor.
It has a bright yellow color with faint green highlights. The nose is refined and expressive, with apricot and honey aromas mingling with notes of tropical fruit and citrus, all wrapped in a delicate oak influence showing hints of nuts and vanilla. The palate is rich, layered, and complex, perfectly balancing its wealth of fruit, honey, and nut aromas with a refreshing acidity.
It can be cellared for up to 8 years, during which it develops a distinctive richness and an exceptional bouquet. Best enjoyed at 12°C. Pairs well with large grilled fish, seafood risotto, sushi, stuffed duck or turkey, and rich cheese soufflés.
