This sparkling dry wine that combines the fine, elegant Assyrtiko and the highly structured Xinomavro was left on its lees for at least 48 months to develop an extremely complex and unique character that many champagnes might envy. White gold colour with persistent bubbles attracts the eye, while the intense aromas of fresh mint, anise flavour and yellow apple, and the perfectly balanced acidity linger playfully in the mouth for a very long time.
