Description
This technical challenge was masterfully solved by Régis Camus and the toji (master brewer) of the family-run Konishi brewery in Hyogo prefecture. The result is an alternative to rosé and white wine, sulfite-free and 12% alcohol, perfectly suited to relaxed afternoons or business lunches, and pairing well with everything from a light snack to your favorite risotto.
